    Solid place for Green Bay. Mostly hits, a few misses, but I'd go back. Came here with the parents and had a nice overall experience. Food ranged from really great to "meh". My Caesar salad was good, the mini-po boy baguette was flavored nicely but the fried shrimp were over done. I loved the sauce on my pork chop, but the chop itself was not cooked well. My step-mom loved her steak, my dad said his was okay. The red velvet cake was outstanding, as were my old-fashioneds. Let me tell you, you can't get a decent old-fashioned east of Lake Michigan so I was enjoying them. The décor is very nice here and the thing that brings it up to four stars is service. Logan was our guy and he was great. Terrific energy, great recommendations...it seems like he really enjoys his work and it shows. I guess it might be expensive for Green Bay but I live in NYC so I found the prices very affordable by comparison. $45 prix fixe for four courses? That's awesome in my book.

    Great food. During our lost weekend in Green Bay we had dinner here Saturday night. I had the Calamari as an appetizer, the Surf & Turf special as my main course with sides of Gouda Mac & Cheese and Bacon Brussel Sprouts. All Aces.

    Had an amazing dinner! Steak was done to perfection! Bread service was great and the butter choices were delicious. My husband loved the tomato basil soup. Chop salad was nothing to yelp about. Dessert was I die for! Truffle fries were great. We had a fabulous time and will definately be going back when we are in town.

    Heck yes Green Bay! I've been here a handful of times over the past few years with a recent trip for the playoffs. Definitely a steakhouse that can stand it's own against other places in WI. The veal chop is something special, highly recommend. Service was a little spotty with some mistakes not really worth highlighting. Atmosphere is comfortable and great for table conversation.

    Came here for our second time to celebrate our anniversary, had a great meal again! Started with the scallops for a appetizer and ordered ribeye steak and lobster for dinner. Everything was amazing! Good drinks too and great service! We will be back!

    Great atmosphere, subpar service at the bar and an awful steak. I had to try the "Firefighter" even though the flaming 151 was gimmicky. It was way too spicy and way to tough even at medium for my tastes. They offered to remake it but at 30 minutes on a relatively slow night I declined. Thankfully the creme brûlée was good. Edit: Comped a drink and dessert. Nice of them

    Republic Chophouse is one of those rare outstanding restaurants in an unexpected location (being, that is, dead little downtown Green Bay). The flavors lean toward the unexpected (rosemary, apricot and bleu cheese, for instance, offered on a ribeye as a special-- delightful!) and the wine list is beyond exuberant. If you're looking to impress out of town guests, Republic Chophouse should be akin to what they are used to seeing in Chicago-- but with Green Bay portions. We were seated on a mostly dead Tuesday night with no problem. The waitstaff was doing a great job of seating people throughout the restaurant to maximize the intimate dining, but even if the place had been hopping, the tables are spread far enough away from each other to maintain private conversations. The wine list is extensive and there are a few interesting cocktails to intrigue. We started with a glass of wine each-- the cab sauv being "unremarkable" but the Malbec was a surprising high. The bread service was generous, and we received three butters: two that were standard and one that seems to be seasonal. Our salads -- Caesars-- were a $2 add on to our dinner and absolutely worth the two bones -- real anchovies, fantastic balance of chopped hardboiled egg, parm and homemade dressing. Seriously, the best salad I think I've ever had in Wisconsin. The only soft notes in the first third of our meal were that the wine was room temperature (red should be around 55 to 60 degrees when served) and the salad plates should have been chilled. We couldn't hit the self-proclaimed meat palace without getting some beef, so I ordered the carved flat iron while my dining partner ordered the Boursin and crab tenderloin. We also ordered the white truffle fries as a side to share. Here's where we started noticing some soft points: while the fries were identified as "White Truffle and Parmesan Fries", neither of us could taste nor smell truffle anywhere on the dish. The finishing oil must be terribly dilluted or perhaps it's a house-infusion gone wrong. We should have been knocked in the face with truffle-ness, between that and my flat iron that was purportedly finished with white truffle oil, but it just wasn't in evidence. The Boursin tenderloin was like butter, but the crab must have been the same variety as the white truffle, in that it never made it to the table. That being said, the food was GREAT, just not as promised on the menu. As for dessert, the red velvet cake was obscenely huge. I'm not saying that as a girl who pretends to be horrified by desserts -- this was seriously enough for eight to ten people to share comfortably. I was somewhat embarrassed to have it delivered to the table. That being said, where else can you get practically AN ENTIRE CAKE at a fine restaurant for 9 bucks. It's the deal of the century. Alas, it was quantity over quality, as it was red, and it was smooth like velvet, but lacking that sour cocoa taste that makes red velvet cake so distinctive. Again, though, I'm greedy and I'm definitely going to eat the leftovers of that cake! All in all, we're very pleased with our dining experience. The menu choices aligned with our aesthetic, the wine and scotch offerings were diverse and intriguing, and the food was prepared perfectly. I mean, really, my biggest complaints were that someone in the kitchen misplaced the truffle oil and there was too much cake. TOO MUCH CAKE. That's a first world problem if there ever was one. It seems that many of my fellow Yelpers are downgrading Republic Chophouse for being a fine dining establishment with higher prices than the Pancake Place. Come on, guys, you knew the price when you walked in the door. If the prices bothered you that much, order the $10 hamburger and be done with it or take off your fancy clothes and hit McDonalds.

    I really enjoyed this steakhouse. The decor is nice, and the bar area is nice late night place to have wine. I have always received great service at Republic, and I think it contributes to the fact that I like this place so much. We started off with the steamed mussels. The mussels were good, but the broth was fantastic. We were all dipping our bread for a few more drops. The bread also came with regular butter, cheddar butter (yum!), and chocolate chip cookie dough butter (this was different, but surprisingly yummy). I ordered the french onion soup to start, and it had a great broth, but it had a little too much bread. My dining partners ordered the chop salad (he liked it), and a wedge salad (he also like it). For our entrees, I ordered the bone in filet. My dining partners ordered the horseradish blue tenderloin, and the veal chop. All the entrees were delicious especially the veal chop. Yum. We ordered creamed spinach, and asparagus for the table to share. Both great choices. It is a little pricey, but the food and service are great. I will defiantly be back again!

    Went there on a weekend night in November and it was packed. We waited over 45 min for a table to open up. So we started off at the bar, which wasn't too bad and you can order appetizers while you wait. We ordered the crab cakes, which were decent, but nothing to brag about. Once we finally were seated, we were pretty hungry so we promptly ordered. My wife order the Moroccan Lamb Chop and I took the Hunter's Rib-Eye along with creamy spinach. The meal was delicious, but the desert (Creme Brulee, tasted burnt) was not, and so too was the bill. All and all, the steaks were great but the meal was way over priced.

    Valet awesome, star service, coat check, beautiful atmosphere.... however my food was not great, ordered a $35 Irish steak something, not very flavorful at all, bland taste, it was a hearty portion though, no sides unless you ordered them for additional cost, bacon wrapped scallops delicious...

    We were in town for playoff weekend and were looking for a higher end steakhouse and came across Republic on the Internet. Got there early and had dinner at the bar. We were not sure what to expect but this meal was one of the best we have had in a long while and we frequent steakhouses in our home of Washington, DC. The appetizer Tuna Tartare was fantastic as was the house made Salad dressing on the Chopped Salad. Steaks were cooked to perfection and were incredibly juicy. Sides of Wild Mushrooms and Mashed Potatoes rounded out the meal. Service was awesome and I just cannot say enough good things about Republic. Definitely gonna be our first stop next time we are in Green Bay..

    Service and ambiance are great. Tryng to be a chic steak house in Green Bay seems a bit odd, but it works for the most part. Appetizers are good, not great. The bread and three types of butter are really good: regular butter, butter with cheese (of course), & gingerbread butter. The pretzel bread is also very tasty and warm. The cheese and potato soup was a great starter, very flavorful. I had the 8 oz sirloin wrapped in bacon and stuffed with bleu cheese, then crusted with peppercorns. They forgot to bring the bearnaise sauce on the side. All four of the steaks for our party were overdone. They offered to fix the one that was exceptionally bad, but it took more than 20 minutes to do a new steak. The steaks that we did eat were flavorful, but they were not the high quality midwest beef that I, or my friends expected. Vegetables were delicious, but because this is a pricey steak house and the steaks were not up to snuff, I have to say this warrants a single star.

    Very nice steakhouse located in downtown Green Bay. The restaurant itself is very nice: valet parking, private dining areas, and a great bar area. It's all very trendy, and I would agree with other reviews that it has a Chicago feel to it. The bar area is especially nice to have an appetizer at, or have a few drinks at late at night. The bartenders are topnotch and the host and waiters are usually great too. The food itself is expensive, but it's usually very good, although I have had dinners that have been disappointing, which is not what you want when you're at a steakhouse. That being said, I keep going back to Republic, especially for drinks!

    Ok so I have been to replublic a couple of times. I enjoy the atmosphere because a lot of the people that go there do not smoke. It is not a smoke free bar, but nice not to have a smoky environment. I feel it does not stand up to chicago because when i went there around 11pm, the valet guy told me he does not valet anymore??? and when i wanted to order food they stoped serving at eleven. Chicago does not stop valet service and will serve till 12. I have had excellent drinks and food!! Steak is awesome and so is the atmosphere.

    I mostly come to eat and drink in the lounge area (lounge menu available). The bartenders all have wonderful personalities. The cheese-butter is to die for. The chef is amazing. I'm a vegetarian and call ahead of time if we plan to order entrees and she whips me up something delicious every time. Tomato basil soup - also terrific.

    I grew up partially in Green Bay, many moons ago. And I was really surprised to find a place like this there when I visited to see a Packer game recently. It reminded me of a restaurant you'd see in a much bigger city. And I'm referring to the decor and the prices. The place had big city attitude and big city prices. OK, I should clarify that. Our waitress was perfectly lovely and did not display any sort of "attitude". (Of course everyone has an attitude of some kind, but when you say "oh she had an attitude" you usually mean a bad one.) She was both very friendly and professional. We arrived on a Saturday night and were quoted a 90 minute way for 2 (WHAT?!) but fortunately a table had just opened up in the bar area (which is first-come, first served) and we were able to score a seat immediately. The bar area was a bit raucous. There was one group in particular that was clearly having a good time, especially the guy that fell over in his stool. Then there was the group of loud-mouthed youths that grabbed a table up front about halfway through our meal. They staff kept stopping by to chum around with them, so I'm guessing one or more of them worked there and were off duty (including the one I dubbed "Mary"; he was the loudest of them all). But I think the actual dining rooms were a bit more subdued, so I don't want to dock them for this. The cheese plate was excellent, as one might expect from an upscale restaurant in Wisconsin (duh, Wisconsin cheese!). Most of the entrees come with soup or salad (less common in big cities) and the mixed greens salad was fine. They also brought out bread...3 kinds of butter! There was regular, cheddar butter and their "featured butter" (only in WI) cake butter. It contained sprinkles and tasted like frosting! Yum! The entrees, which are served a la carte, took some time to come out, but the place was pretty packed. My friend enjoyed his steak, but my chicken was average. The meat itself wasn't too tasteful, and it was completely drowned in a thick, sweet sauce (if that was the demi glace I'd hate to see the full). The Truffle & Parmesan Steak Fries (which we ordered a side of to share) was delicious! The dessert really took the cake, though. Literally. The red velvet cake was the largest "slice" of cake I'd ever seen. And it was really, really good! Two of us shared it and we still took a huge piece home. All in all I'd give Republic 3.5 stars. The prices are high for Green Bay. My chicken was definitely not worth $28, even considering the wee salad that came with it; the fries were an extra $8. However, most of what I ate was pretty good, the decor is very nice and the service was excellent. Therefore, I'm rounding up to 4 stars.

    The Chophouse is one of, if not, our favorite restaurants in Green Bay. Great food, excellent atmosphere, always attentive staff! Bacon wrapped scallops are a never fail and the tuna tartar has become a new favorite. Steak and seafood entrees are delicious, usually choosing the peppercorn crust. Can't beat it! The specials are also a never fail... The creative dishes certainly haven't disappointed! We always get one side to split and change it up each time we dine. Great food in GB!

    Republic Chophouse ran a billboard ad a while back stating that "Vegetarians can enjoy the decor." Untrue. You see, I will be the second vegetarian to give this place a five star review. My husband (who is also vegetarian) and I have not only ventured into Green Bay's premier steakhouse experience but we frequent the Republic Chophouse. We have no trouble ordering our meals off the starter, soups, salads, and sides menus. We've ordered the bruschetta, cheese plate, tomato-basil bisque, truffle & parmesan steak fries, garlic mashed potatoes, & sauteed wild mushrooms multiple times each and have never been disappointed. The food is top-notch in flavor, quality, and freshness. We have even come here once just for dessert, the soon-to-be legendary red velvet cake is to die for and will probably cause a food coma if you decide to tackle the whole slice solo. IT'S MASSIVE, trust me on this one people, you'll need to find a guest or five to share this with. Some may complain about the pricing of items on the menu but it has to be understood that any new restaurant will be making price and menu adjustments regularly as they learn how their restaurant fits into this city. We have seen the cheese plate go from $10 to $15 but still find it well worth the money in comparison to other cheese plates in similar Green Bay restaurants. Our total bill has never been over $40 but that is because we do not order entrees. Please note that any omnivore who orders steak, chops, and/or fish will definitely see a higher bill total. They did everything right in this restaurant. The layout and decor is classy, modern and demanding yet casual, open and relaxing. They have a very large bar/lounge area that is open during dinner hours through bar close. Although we have an aversion towards annoying televisions in bars Republic has done it right by hanging only two flatscreens up and not playing only sports. We have seen them play Food Network from time to time. The bartenders and servers are attentive and have plenty of character to make the experience at Republic thoroughly enjoyable. There are plenty of choices when it comes to where you want to enjoy your dining experience at Republic. Guests can be served at traditional tables, big private booths, at bar height tables in the bar, the actual bar (which is our preference), cocktail tables in the bar nook, or in one of the two reservable private dining rooms. They've got the details done right down to the restrooms. Although I can't speak for the male diners... Ladies, Republic has a warm inviting restroom for you to freshen up in, there's even an armchair and a full length mirror for your comfort and vanity. You never knew you needed a full length mirror at a restaurant until you experienced it. To sum it up and to re-write their ad "Vegetarians can enjoy the decor AND the food."

    Solid steakhouse choice in downtown Green Bay. The setting is dark and wooded, slightly upscale with a nice bar area suitable for dining. I had been here on two prior occasions and each time the steak I ordered came at the right temperature and the preparation was spot on. The chef compositions are really nice if you're feeling fancy; I tried the rib eye and the tenderloin. An ala carte preparation hanger steak was excellent as well. The service was knowledgeable and friendly. I would definitely recommend a visit.

    Good food. Not good enough for what we paid. Slow service, but friendly. The bar area is cool - inside ambiance is nice, but I shouldn't be paying for ambiance, right? If you've got time and money to spare - check it out.

    From out of town and based on one visit. Upscale interior, nice atmosphere and staff. Ordered the appetizer Asian beef kabobs and spinach salad. Salad good, portion of meat enough for a satisfying meal but dreadfully over marinated (very, very salty) and the coconut curry sauce was very bland. The irony here. Would not order again and would be hesitant to order a $40 entree when they can't get a $17 appetizer right.

    News Years eve dinner was outstanding! The specials they had were off the chart. Service was some of the best ever, friendly and on the spot. My steak was done perfect med rare, wife's also was also done perfect.

    Republic is the best steak restaurant in GB. The staff and service is good. The food is excellent. The menu is strong. The bar staff always delivers a great cocktail. This is much better than another place downtown.

    Best steak I have had in quite some time. Got the filet special with orzo and mushroom ragout. Mix that with the pinot noir from Williamette valley and thank me later. Oh and the butters for the bread are a nice extra touch.

    Started with the bacon wrapped scallops. Very tasty but it seemed like all three were cooked at different temps? One was so bad my wife couldn't eat it. Not sure if that scallop was bad or just not cooked? Server was totally nice and deducted from them from the bill. The tomatoe bisque was awesome a must try especially on a chilly night. The house basil, olive oil and herb salad dressing was excellent different from your standard choices. I had the NY strip charred with the balsamic reduction thta was cooked very well. My wife had the beef tenderloin peppercorn crusted with a creamy dipping sauce. Both the steak and the sauce were awesome. Naturally ended with the red velvet cake which was very good. I realize they keep it refrigerated because of the cream but serving it thta cold we felt took away from the taste. Enjoyed a bottle of Stone Throw merlot can`t go wrong with this wine. Server was great. Ambience is very nice it was a quiet evening so that added to the homey atmosphere. All in all I would go again. Bring an appetite as the portions are good size. Price is about right for a quality steak house.

    The atmosphere here was amazing from the first impression. While it did take a moment for the valet to get out to us, everyone was very professional and made the experience feel special. Our waitress was very personable and knew the menu well and even allowed us a tour of the rest of the restaurant when we asked to see it. The food was pricey, but worth it, especially the steak fries with truffle and fresh grated parm. The salad was plain and unimpressive, but they made up for it with excellent dinner rolls with a variety of flavored butters. As we waited at the coat check, the hostess even let my date pull a rose out of a decorative bouquet for me. A delightfully romantic evening. I will definitely be back.

    Stop by the bank for a loan before dinner! Had rsvps for dinner on a non-major holiday: waited 45 minutes past our time slot. Strike one. Sat at the bar while waiting for our table, waited 20 minutes for the bartender to serve us our drinks. Strike two. Two cocktails, one appetizer, two steaks, two side dishes, one bottle of wine ($28) and one dessert. Dinner and tip: $210. Average food for the price. STRIKE THREE AND YOUR OUT!!!!

    We went there early on a Saturday evening and the place was almost empty but not for long. We both ordered filets with a side of mashed potatoes with salads. Not surprisingly, the steaks were amazing and perfectly done. We saw the pictures on Yelp of the red velvet cake and had to get it. 6 people could have eaten 1 piece! It was a very good red velvet, but not great. Overall, we got a glass of wine each, steaks, a side, salads, and the cake for $100. Certainly on par with other good quality steakhouses. Looking forward to our next visit there!
